Tester: Rice Bran Artisan Roll
I just inhaled a roll!!!! First, I wanted to thank you again. I opened the box and the pack really wasn't frozen. I'm not sure if I would invest in using the ice pack again. I put the frozen rolls back in the freezer. I made a garlic bread roll w/melted Parmesan cheese. It was very good. The roll had a nice texture - I was very happy that it wasn't that airy texture that I think you get from tapioca
flour??? The roll kind of reminded me of a baguette crust. I really liked it.
It's a very nice size also. I think it was great and can be used for many
different things.

Tester: Mini Baguette (2-day travel)
Last night I warmed an mini baguette roll up for dinner. It was tasty,
especially dipped in olive oil. They are heavier than a regular roll and you are
right, I still have wheat taste buds. But I enjoyed it and did not feel
"deprived", if you will. I love the crustiness of them. My son also liked them,
and he does not need a gluten free diet. The taste was hearty and I wonder if I
simply served them at a dinner party, would anyone really know? I think you make
a great product! Thanks again for letting me try them.

Wow! Your artisan rolls are wonderful. They taste great sliced
and toasted. Similar to a rye bagel. Similar to rye bread. And your
sourcream coffee cake, yum. You guys are great. The only downside is that I
ameating so much of your baked goods that I am putting on too much weight -
my fault.
I travel out of the country a few times every year for 10 to
14 days and I would love to be able to take with your artisan rolls. If I
get them shipped to me, will they stay unfrozen for 3 days until I get to
my destination where I can give them to the kitchen to freeze and warm up
for me each day?

ANSWER: We put the baguette to a four-day test and then refroze it. Upon refreshing, the baguette was still good. I felt the rice bran taste was more pronounced but a dip in olive oil and vinegar cured it. The texture held up nicely. We did the same test on the artisan bread roll and the results were similar to the baguette but I felt the crumb, while not dissolving, was beginning to lose its integrity and beginning to crumble slightly. Take the baguettes with you instead. To maintain quality, we are shipping our bread products two-day shipment only but the good news is that we have some great negotiated rates and we are passing the savings onto you. - Lisa, GF baker

Cheesecake
Just wanted to let you know that my 4 year old daughter just had your Out of This World Cheesecake for the first time (her first cheesecake ever) and she devoured it! I'm wondering if you will make any other cheesecake flavors. (chocolate chip perhaps?)
I'll be in again soon to pick up another cheesecake and see what else looks good!

Cookiesjust a little feedback on the gluten-free cookies in your freezer-----i had a dinner party the other night and served two versions of them and everyone LOVED them. my husband, who
is gluten-free always, thought they tasted terrific. we are soooo looking
forward to tasting all the coffee cakes and other delights that you have
coming.

Cupcakes, etc.Regarding the review of your cupcakes (somehow that doesn't sound how I mean
it to sound): I am not a rabid cupcake fan, but I could not help but pop those
G-F suckers in my mouth whole! The taste is great and who needs a fork?
The variety of G-F
products Deerfields offers is good. I fervently agree that your cheesecake is
great. My wife put some sort of topping made with rainier cherries on and that
cheesecake did not last the afternoon-evening at our house. That says something
considering that it was "off limits" to the kids.
Your G-F brownies
earned rave reviews at our place, and that is no mean feat as my wife considers
herself a pretty good brownie-maker.
We especially enjoy the Rice Bran
Artisan Rolls and still can't get over how good they taste ... and how quickly I
ate them. I believe that it is this area that you should concentrate your
researches and product development. Pizza crusts, breads and rolls that do not
taste like a poor grade of plywood and have the consistency of igneous rock are
really what this Celiac craves. The desserts are great, but getting great
tasting, relatively light and soft everyday fare would make our lives so much
better.

Decorated CakesI just wanted to personally e-mail you and thank you for everything you are doing for me. I truly appreciate you making a special cake for my birthday; I haven't had a real birthday cake since I was diagnosed, and that means a lot to me. Egg-freeI ordered some things for Thanksgiving. The apple pie was great.
First time my 4 year old multiple food allergy kid could have that kind of
thing. He likes your rolls, too. PLEASE if you can somehow get some cookie type
things without egg, it would be terrific. Keep up the REALLY good work!

At our family Thanksgiving, those who tasted your Dutch Apple pie raved about
it. See my 11 yr old daughter's comments below. Also, at the recent
Preceptorship dinner for the U of C Celiac Center, we were treated to a tasting
of 4 different Deerfield's GF desserts - lemon button, cupcake, brownie and
cheesecake. There was great feedback from those who have never before sampled
your wares.

Pizza Crust
Tester: Frozen Pizza Crust
My kids really enjoyed the pizza we made for lunch today. Thank you for letting
us try your gluten free pizza crust. I have just a plain oven without the
convection. You said you baked it at 375 degrees for 15-20 minutes. I raised
it to 400 for 20 minutes (we used finely grated mozzarella cheese) and it came
out great!! My husband also loved it and usually won't try anything gluten free
unless he doesn't know it is.

Tester: Frozen Pizza Crust
I am writing to you in regards to a free sample you gave my dad at Christmas time. He bought a gluten free coffee cake, and you sent him home with a gf pizza crust for me to try. It was wonderful!! The only one I have tried before was the Namaste foods brand that you have to mix up yourself, and it doesn't taste nearly as good as yours nor is it as convenient. I will definitely come in to buy one and for more of your other gf
goods. Thank you so much for the free crust! My fiance loved it, too, and he
doesn't even have to eat gluten free. Critique: great flavor, did not taste
gluten free, very light, the only room for improvement might be a thinner
version of it.

Tester: Pizza Crust
Last night my wife made us a pizza using Deerfields Gluten-Free Pizza Crust. To come up with a one-word comment, I am torn between WOW! and OHMYGOD! The crust is soft, not hard; chewy, not rubbery; and has none of that typical gluten-free dough aftertaste that I have come to dread. It actually tastes like "normal" pizza crust! My non-Celiac wife is also very impressed with the taste of your pizza crust. Absolutely
astounding.
I must confess that I approached this pizza crust with some trepidation.
After being diagnosed as a Celiac, I tried many different pre-made gluten-free pizza crusts along with various mixes. I am someone who takes his pizza very seriously and I gave up pizza when none of the gluten-free pizza products met my standards. The bottom line is that I have not had a pizza in about two years ... until yesterday. Well my self-imposed wait is over and I will be getting a small, but important, part of my life back again thanks to the baking staff at Deerfields Schaumburg.

Quick MixI just wanted to tell you that we used the gluten-free sugar cookie mix to make Christmas cookies this weekend and they turned out amazing! I was so excited to be able to make cookies with my daughter with Celiac and know that she could eat as many cookies as she wanted and she wouldn't get sick (at least not get sick from gluten - eating too much, that's a different story!). The mix was so easy to use and no one can tell its gluten free. Thanks so much for selling it.

I finally got around to making gluten-free sugar button cookies this weekend. I
used your flour mix, and they turned out wonderful! I have been trying without
success for three years to make a good sugar cookie and couldn't believe how
good yours turned out! I followed your directions precisely with chilling and
using a glass to push down the dough. The only thing I did extra was use a
smaller glass to cut off the rough edges of raw cookie dough. They're all
packed in my freezer ready for Thanksgiving and XMAS and frosting. I know my
daughter and Granddaughter will be thrilled to not only have the gluten-free
apple pie but cookies as well! Thank you, thank you, thank you!!
